An old 12th-century monastery, full of stories and tradition, fully restored to house one of the most enchanting pousadas I’ve ever visited. This is the former monastery of Santa Maria do Bouro, today known as the Monastery of Amares. Portugal is home to important buildings, always keeping its past alive and present in our time. When I arrived here, I felt a complete silence; I heard the trees talking to one another, the song of the birds and the gentle breath of the winds!
In every moment here your feelings are tuned, equalised in perfect harmony with the place.
What was once its old kitchen now gives way to the pousada’s restaurant, the space carefully preserved, keeping features faithful to what it once was!
I keep wondering what the old monks cooked, what the place must have smelled like — was there the scent of baking bread, of coffee and other spices? What might we have found inside this fabulous medieval kitchen? The answers could be many, but today we have the chance to experience and taste the singular flavours of traditional Portuguese cuisine.
Today this beautiful restaurant brings unmistakable flavours; once you taste them, you know for certain you are truly in Portugal.

My impressions of the place are the best possible! I’m very critical of the places where I work and, consequently, where I stay. This was one of the places where I felt at peace! I loved the cuisine and the comfort; the people always kind and helpful!
